BANANA OATMEAL COOKIES
YIELD: about 30 biscuits PREP TIME: 10 minnutes COOK TIME: 10 minutes
1/2 cup unsalted butterat room temperature
1 large egg
3/4 cup mashed ripe bananas (about 2 medium)
1 1/2 tsp pure vanilla extract
1 cup all-purpose flour
1 tsp baking soda
1 tsp salt
2 tsp ground cinnamon
1 cup semi-sweet chocolate chips
Preheat oven to 350°F.
From the bowl of a stand mixer fitted with the paddle attachment, or in a big bowl with an electric mixer, beat the sugar and butter till light and fluffy, about 3 minutes.
Scrape down the sides of the bowl and then mix in the egg until completely incorporated. Scrape the sides of the bowl again and add the mashed bananas and vanilla.
Gradually add the bread mixture to the banana mixture and mix until just blended.
Scrape the sides of the bowl and then stir to recombine.
Stir in the oats and chocolate chips and blend until incorporated.
Use a medium cookie scoop (about 1.5 tbsp ) to scoop the dough on prepared cookie sheets leaving about 2 inches between each cookie.
Bake in preheated oven for about 9-11 minutes.
Remove cookies from the oven and then gently press on the shirts of each cookie using the bottom of a drinking glass. Because these cookies do not spread considerably, this can give them a conventional cookie shape.
Enable the banana oatmeal cookies to cool on the cookie sheets for 5 minutes before removing them to a wire rack to cool thoroughly.
